With the weather getting nicer outside, you want something that can fuel you all day long. Well, I have the perfect Banana Hazelnut Pancakes recipe to help keep you going all day long!
Pancakes are an all-around favorite in most households, for the young and the not-so-young (I will still happily eat a pancake in the shape of Mickey Mouse without shame. I bet you would too).
A basic pancake recipe is so simple but leaves the door wide open for endless variations and flavors that are sure to please any palate.
In dreaming up ways to make your pancakes the best pancakes you’ve ever tasted in your entire life, have you ever considered just how healthy you could make them? By swapping out some of the standard ingredients with healthier alternatives (no white flour, refined white sugar or no dairy), and incorporating a few essential oils, you’ll never feel guilty about indulging in a hearty breakfast on Saturday morning ever again!
And no worries- you don’t have to sacrifice flavor to do it.
These pancakes are heavenly!
They’re also dairy-free and grain-free. Woohoo! Gather up your essential oils and healthy ingredients and let’s make breakfast!
Ingredients:
- Coconut Oil (for pan)
- 1 cup Hazelnut Meal
- 1/4 cup Coconut Flour
- 3 eggs
- 1 Tbsp. Coconut Sugar
- 2 ripe Bananas, mashed
- 1/3 cup Almond Milk
- 1 tsp. each of:
- Flaxseed Oil (or flaxseed meal)
- Baking Soda (aka Sodium Bicarbonate)
- Cinnamon Powder
- 1 drop Vanilla Essential Oil (or more to suit your taste)
Instructions:
- Add all ingredients to a medium-size bowl and beat with a hand or electric mixer until the batter is blended well.
- Lightly grease your skillet or pan with coconut oil and set over medium heat.
- Drop 1/4 cup scoops onto the greased surface and spread the batter with a spoon into a thin, wide circle.
- Cook for about 3 minutes per side, or until lightly browned.
This recipe is easy to customize as well. For example, since it’s so healthy- I had to toss in a few dark chocolate chips to the mix (dark chocolate is heart-healthy!).
You could do chopped hazelnuts or thin banana slices. I like to top mine with a few sliced bananas and some dairy-free whipped topping.
